We think about hairnets, thermometers, and use-by dates. But in complex environments like hospitals and care homes, those threats can reach beyond the kitchen and infiltrate the entire environment.<\/p>\n<p class=\"\">Listeria monocytogenes is a resilient traveller. To keep vulnerable residents and patients safe, we must first understand the pathogen and how it behaves.<\/p>\n<h2 class=\"\"><b class=\"\">What is Listeria?<\/b><\/h2>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Listeria (Listeria monocytogenes) is a type of harmful bacteria found in many everyday places, such as soil, water, plants and surfaces. Most bacteria struggle to grow in cold conditions, but Listeria is different.\u00a0<\/span><span class=\"\" style=\"font-weight: 400;\">It can grow in fridges, survive in damp areas, and hide on equipment or surfaces even when they look clean. Because it can live for a long time and multiply in chilled foods, even low numbers of the pathogen can quickly become dangerous if it is not controlled.<\/span><\/p>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">People usually become ill by eating ready-to-eat foods contaminated with Listeria. As ready-to-eat foods have no cooking or reheating process to<\/span> <span class=\"\" style=\"font-weight: 400;\">destroy the bacteria, these foods present the highest risk.<\/span><\/p>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Common symptoms include fever, muscle aches, sickness and diarrhoea. In people who are more vulnerable, the illness can become very serious and may lead to conditions such as blood poisoning or meningitis.<\/span><\/p>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Listeria is not the most common bacteria, but when it develops in food, the effects can be life-threatening. This is why the <a href=\"https:\/\/www.food.gov.uk\/topic\/listeria-monocytogenes\">Food Standards Agency (FSA)<\/a> stresses that preventing the spread of Listeria is essential in care and healthcare settings. Understanding what Listeria is, and how it behaves, is the first step in keeping people safe.<\/span><\/p>\n<h2 class=\"\"><b class=\"\">Who is most at risk?<\/b><\/h2>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Anyone can become ill from Listeria, but some people are at much higher risk because their bodies cannot fight infection as well.<\/span><\/p>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">People at highest risk include:<\/span><\/p>\n<ul>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">Adults over 65<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">Pregnant women and unborn babies<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">People with weakened immune systems (due to illness, medication or treatment)<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Newborn babies<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">Residents or patients in care homes or hospitals<\/span><\/li>\n<\/ul>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">In many care and healthcare services, a large number of people fall into these groups. This means that even a small mistake - such as a fridge running too warm, food being left out too long, or a surface not being cleaned properly - can have serious consequences.<\/span><\/p>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Listeriosis can also take days or even weeks to show symptoms. By the time the first cases are spotted, many more people may already be infected. This explains why it is so important to prevent the spread of growth and spread of listeria through everyday tasks like checking fridge temperatures, storing food safely and cleaning properly.<\/span><\/p>\n<h2 class=\"\"><b class=\"\">UK Listeria outbreaks<\/b><\/h2>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">Recent UK incidents show how quickly Listeria can spread and how serious the outcomes can be, especially in hospitals and care homes. Learning from these events helps prevent the same mistakes from happening again.<\/span><\/p>\n<p class=\"\"><span style=\"font-weight: 400;\">Most outbreaks involved the same types of problems:<\/span><\/p>\n<ul>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Chilled food not kept cold enough<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">Ready-to-eat foods becoming contaminated before reaching vulnerable people<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span class=\"\" style=\"font-weight: 400;\">Poor cleaning routines, allowing bacteria to build up<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Food suppliers not being checked properly<\/span><\/li>\n<li class=\"\" style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Food left out of the fridge too long during service<\/span><\/li>\n<\/ul>\n<p class=\"\"><span class=\"\" style=\"font-weight: 400;\">These examples show how easily Listeria can spread and how quickly vulnerable people can be harmed. They also highlight why strong food safety controls, good cleaning, and consistent staff routines are essential in keeping everyone safe.<\/span><\/p>\n<h2 class=\"\" data-path-to-node=\"4\">How Listeria spreads throughout settings<\/h2>\n<p class=\"\" data-path-to-node=\"5\">In a healthcare setting, no room is truly sealed. Kitchens, wards, treatment rooms, and corridors are all connected by the constant flow of people and equipment. If <i data-path-to-node=\"5\" data-index-in-node=\"165\">Listeria<\/i> finds a foothold in a ward kitchenette or a shared bathroom, it doesn\u2019t stay there. It hitches a ride.<\/p>\n<h3 class=\"\" data-path-to-node=\"6\">Building &amp; Equipment<\/h3>\n<p class=\"\" data-path-to-node=\"7\"><i data-path-to-node=\"7\" data-index-in-node=\"0\">Listeria<\/i> loves moisture and cold. Unlike many other bacteria, it can thrive in fridges and freezers. It hides in the places we often overlook:<\/p>\n<ul>\n<li data-path-to-node=\"8,0,0\"><b data-path-to-node=\"8,0,0\" data-index-in-node=\"0\">Joints and Seals:<\/b> Rubber gaskets on fridge doors.<\/li>\n<li data-path-to-node=\"8,0,0\"><b data-path-to-node=\"8,1,0\" data-index-in-node=\"0\">Drainage:<\/b> Sinks, taps, and floor drains.<\/li>\n<li class=\"\" data-path-to-node=\"8,2,0\"><b data-path-to-node=\"8,2,0\" data-index-in-node=\"0\">High-Touch Points:<\/b> Door handles and food trolleys.<\/li>\n<\/ul>\n<h3 class=\"\" data-path-to-node=\"9\">Human Movement<\/h3>\n<p class=\"\" data-path-to-node=\"10\">Every time a staff member moves from a patient's room to a service area, or a waste trolley rolls down a corridor, there is a risk of <b data-path-to-node=\"10\" data-index-in-node=\"134\">cross-contamination<\/b>. When dirty tasks such as waste handling and clean tasks like food service overlap without strict controls, the environment becomes a highway for bacteria.<\/p>\n<h2 class=\"\" data-path-to-node=\"12\">What are Listeria Biofilms?<\/h2>\n<p class=\"\" data-path-to-node=\"13\">One of the greatest challenges in the control of Listeria is the <b data-path-to-node=\"13\" data-index-in-node=\"63\">biofilm<\/b>. Think of a biofilm as a shield for bacteria. It\u2019s a thin, sticky layer that attaches to surfaces, protecting the <i data-path-to-node=\"13\" data-index-in-node=\"189\">Listeria<\/i> underneath from standard wipes and light cleaning. Once established in a crack or a drain, a biofilm allows the pathogen to repeatedly re-contaminate the area. You might clean the surface, but the bacteria underneath survive and quickly spread again.<\/p>\n<p>Biofilms commonly form in damp areas, hard-to-clean spaces, damaged surfaces, frequently touched areas, and places that stay moist for long periods. Typical high-risk locations include door seals and gaskets, drains, sinks, taps, floor edges, cracked flooring, fridge and freezer interiors, and equipment with joints, screws, or crevices.<\/p>\n<p class=\"\">Preventing biofilms through consistent cleaning and moisture control is far easier than removing them once they are established. The aim is to make the entire building hostile to Listeria and to deal effectively with any biofilms that develop.<\/p>\n<h3>What to do\u2026<\/h3>\n<p>To prevent and remove biofilms:<\/p>\n<ul>\n<li><strong>Clean before disinfecting<\/strong>\u00a0to remove dirt that blocks sanitisers<\/li>\n<li><strong>Use the correct sanitiser<\/strong>\u00a0and follow instructions exactly<\/li>\n<li><strong>Allow full contact time<\/strong>\u00a0so the product can work<\/li>\n<li><strong>Use scrubbing<\/strong>\u00a0where needed to break up the biofilm layer<\/li>\n<li class=\"\"><strong class=\"\">Include hidden areas in deep cleaning<\/strong>, such as drains, seals, and joints<\/li>\n<li><strong>Check that cleaning is effective<\/strong>, using visual checks or swabs if used<\/li>\n<li><strong>Keep areas dry<\/strong>\u00a0by fixing leaks, drying equipment, and preventing pooling water<\/li>\n<\/ul>\n<h2 class=\"\" data-path-to-node=\"23\">The Bottom Line<\/h2>\n<p class=\"\" data-path-to-node=\"24\">Learning how to defeat biofilms successfully, to produce and serve safe food and to break the chain of contamination that can spread the pathogen rapidly around your setting are the three crucial steps in protecting your patients, service users and residents against the threat of Listeria.
