Food is considered high risk if it is moist, high in protein, and either ready to eat, or a raw ingredient, as these foods naturally harbour dangerous pathogens.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">The Definition of High-Risk Food<\/h3>\n\n\n\n<p>Technically, high-risk foods are defined by three main characteristics:<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>High Protein Content:<\/strong> Bacteria need nutrients to grow, and protein is their preferred fuel.<\/li>\n\n\n\n<li><strong>High Moisture Content:<\/strong> Bacteria require water to survive and reproduce.<\/li>\n\n\n\n<li><strong>Neutral pH:<\/strong> They are usually not strongly acidic or strongly alkaline.<\/li>\n<\/ol>\n\n\n\n<p>Because these foods are moist and nutrient-rich, even slight contamination can lead to a dangerous bacterial load in a very short amount of time if kept at the wrong temperature.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">High-Risk vs. Low-Risk Foods<\/h2>\n\n\n\n<p>The primary difference lies in stability and the likelihood of bacterial growth.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>High-Risk Foods:<\/strong> This category includes both ready-to-eat items and raw ingredients like poultry, meat and seafood. They spoil quickly and can harbour pathogens like <em>Salmonella<\/em>, <em>Campylobacter<\/em>, or <em>Listeria<\/em>.<\/li>\n\n\n\n<li><strong>Low-Risk Foods:<\/strong> These are items that bacteria struggle to grow in. This includes ambient dry goods (flour, sugar, dried pasta), highly acidic foods (pickles), or foods with very high sugar content (jam and honey).<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Why is bread not a high-risk food?<\/h4>\n\n\n\n<p>Bread is not classified as high risk - this is because bread is relatively <strong>dry<\/strong>, with little protein content. While it can grow mould over time, caused by spoilage bacteria, it lacks the moisture and nutirients required for the rapid growth of the dangerous pathogenic bacteria that cause food poisoning.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">High-Risk Foods Examples<\/h2>\n\n\n\n<p>Look out for these common high-risk items in your kitchen (this list is not exhaustive - these are just examples of these types of foods):<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Raw Meat and Poultry:<\/strong> Chicken, beef, pork, and minced meats.<\/li>\n\n\n\n<li><strong>Raw Seafood:<\/strong> Oysters, mussels, and raw fish used for sushi or sashimi.<\/li>\n\n\n\n<li><strong>Cooked Meat and Poultry:<\/strong> Sliced ham, turkey, chicken, and p\u00e2t\u00e9.<\/li>\n\n\n\n<li><strong>Dairy Products:<\/strong> Milk, cream, custard, and soft cheeses (such as Brie or Camembert).<\/li>\n\n\n\n<li><strong>Eggs:<\/strong> Especially raw eggs or products containing lightly cooked eggs.<\/li>\n\n\n\n<li><strong>Prepared Salads:<\/strong> Coleslaw, potato salad, and pasta salads containing mayonnaise.<\/li>\n\n\n\n<li><strong class=\"sr-highlight\">Sprouting Salads \/ Vegetable<\/strong><strong>s<\/strong><strong class=\"sr-highlight\">:<\/strong> such as beansprouts, due to their growing conditions<\/li>\n\n\n\n<li><strong>Cooked Rice and Pasta:<\/strong> These become high risk once cooked due to their high moisture content.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">High-Risk Foods for Spreading Bacteria<\/h2>\n\n\n\n<p>Raw foods are particularly notorious for spreading bacteria through cross-contamination. <strong>Raw poultry<\/strong> is a major source of <em>Campylobacter<\/em>, and <strong>raw eggs<\/strong> can carry <em>Salmonella<\/em>.<\/p>\n\n\n\n<p>While raw meats are cooked to kill bacteria, the danger arises when they come into contact with other surfaces. If high-risk, ready-to-eat foods (like a ham sandwich) touch a surface previously used for raw chicken, the bacteria transfer to the ham and multiply. Because the ham will not be cooked again, the bacteria remain active and dangerous.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Storage of High-Risk foods: Where and How?<\/h2>\n\n\n\n<p>To keep high-risk foods safe, you must control their environment strictly.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Where should they be stored?<\/h4>\n\n\n\n<p>All high-risk foods must be kept in the <strong class=\"\">refrigerator<\/strong> (or freezer). However, the specific location depends on whether the food is raw or ready to eat:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ready-to-eat high-risk foods:<\/strong> Store on the <strong>top or middle shelves<\/strong> of the fridge.<\/li>\n\n\n\n<li><strong>Raw high-risk foods (meat\/poultry\/fish):<\/strong> Store on the <strong>bottom shelf<\/strong>. This ensures that any raw juices cannot drip onto and contaminate other foods.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">How should they be stored?<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Covered:<\/strong> Use airtight containers or cling film to protect against physical and bacterial contamination.<\/li>\n\n\n\n<li><strong>Labelled:<\/strong> Ensure you know the use-by date and \/ or when the item was opened.<\/li>\n\n\n\n<li><strong>Separated:<\/strong> Maintain a strict physical gap between raw and ready-to-eat items at all times.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The Maximum Legal Temperature<\/h3>\n\n\n\n<p>In the UK, FSA  \/ FSS regulations are very specific about temperature control, to prevent food spending time in the Danger Zone (5<sup>\u2218<\/sup>C to 63<sup>\u2218<\/sup>C), where bacteria multiply fastest.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Under food hygiene regulations, the <strong class=\"\">maximum legal temperature<\/strong> for storing high-risk cold foods in the UK is <strong>8<sup>\u2218<\/sup>C<\/strong>. However, for best practice and a margin of safety, most food safety experts recommend keeping your refrigerator set between <strong>1<sup>\u2218<\/sup>C and 5<sup>\u2218<\/sup>C<\/strong>.<\/p>\n\n\n\n<p>Understanding how to identify and work with high-risk foods is a key element of good food hygiene.
