The course combines technical food safety knowledge with practical supervisory application, helping learners understand how food safety failures develop and how effective supervision prevents loss of control across food operations.

Contamination

Explores contamination types, the chain of contamination, food risk categories, and the consequences of failure. Learners examine how contamination arises through systems, behaviours, and missed control opportunities, and how supervisors break contamination chains.

Food safety Law and inspection

Covers the UK food safety legal framework, supervisory responsibilities, compliance and due diligence, HACCP in law, and the powers and expectations of enforcement officers during inspections and investigations.

Biological and microbiological food safety threats

Examines pathogenic bacteria, viruses, and other biological hazards, routes of contamination, cumulative risk, and supervisory strategies for controlling microbiological threats in food operations.

Physical, chemical, and allergenic hazards

Explores non-microbiological hazards including physical contamination, chemical risks, allergenic control, anaphylaxis, and lessons from Natasha’s Law and emerging allergen legislation.

Prerequisites and HACCP

Explains the role of prerequisite controls, HACCP principles, CCP identification, monitoring, corrective actions, verification, and the supervisor’s role in ensuring systems work in practice.

Cleaning, waste, and pests

Focuses on cleaning objectives, planning and verification, waste management, pest prevention, and the supervisory role in maintaining hygiene controls under operational pressure.

Personal hygiene, fitness for work, and supervisory insights

Covers personal hygiene standards, hand hygiene, clothing and PPE, illness control, fitness-for-work decisions, and the supervisory responsibility for setting, maintaining, and enforcing standards.

Preserving, storing, and labelling food

Explores spoilage, preservation methods, storage discipline, stock control, food service risks, labelling and date marks, traceability, and recall management.

Time and temperature control

Examines legal standards, cumulative risk across the food journey, loss of control, process design beyond minimum standards, and supervisory decision-making under pressure.
